Cassoulet – the frenchiest darned thing in France

Cassoulet for LUNCH!

In my last post, Clarence, I believe I vowed that I live in France but I never eat French food. Well, I’ve been in the south of France for 3 months now and I can now say that my stomach is totally French. I eat an entire baguette every other day. I eat more “patisserie” et “viennoiseries” than I did in all of the 3 years that I worked above 5 bakeries at NYC’s Chelsea Market. I’ve eaten tons of different cheeses (hope do to do a little blog on that soon), and I drink wine every other day. My stomach is un “ballon de foot”.

My French cousin took a look at my recent facebook photos and exclaimed in delight over a “texto” that I’d finally “taken weight”. Dit Quoi?!!!! – I need a salad…and not a french salad because they always like to add sausage or ham!

The above photo is one of my latest favorite things – it is, in my opinion, the most typical of french dishes – The Cassoulet… (read the full story here.)

Cheryl and Mimi make dinner…

… while the men sit around watch TV and eat. Just kidding. Well, only partly. None of the menfolk (me, my dad, my brother-in-law) cooked that night (I but I did film them for the benefit of the public), but we sure as hell did eat. And delicious it was, as Yoda would say.

Alright, just so you know, I shot this over month ago at my sister’s house in California but due to various circumstances – actual paying work, moving to a new apartment, the fact that these vids take a while for me (Mr. Professional TV guy) time to produce, and I’m kind of lazy – I haven’t been able to put up these recipes, which I promised in my last post, until now. For that I apologize but I know all the 3 regular readers of this site will understand. My sister does her version of empanadas and my mom does her version of polenta. Ain’t globalization grand? Alright, without further ado, check out how my mom and sis do.

Next stop – Soupville!

So here’s my latest entry. Sorry it’s been a while since the last one. I actually was working last week in California on one of the best TV shows ever (oh I meant worst). But this site’s about food and not about me whining about working in bad TV. I guess the point being, work kind of gets in the way of maintaining a blog. My apologies. But just know that all was not lost to “work”. I did shoot some family cooking in Cali which I will post in the near future. In the meantime, check out this chicken soup that I made last week. It’s a nice hot soup just in time for spring when things are warming up and all you want to eat is salad and stuff off the grill. Oops! Okay, maybe my timing sucks, but this chicken soup does not. Check it out right here.

Ryan’s Mapo Tofu

Alright, check out my cousin’s take on a Chinese classic, “mapo tofu“. You’ll notice the video that he shot and edited in a day (far quicker than anything I’ve ever done) is by far the most visually sophisticated and cinematic of all the the videos yet posted on this site. It’s all about visual storytelling. I sense the influence of P. T. Anderson. That’s because he’s a genius and an incredibly talented filmmaker and animator. Did I mention we’re related by blood? Bret, you might want to pay attention to how he peels the skin off the Italian sausages. He doesn’t even use his hands. There’s no “pushing it” at all. Intrigued? Check out the full video and recipe.
